Sensory characteristics

Extra virgin olive oil from the Alfafarenca or Alfafara variety is characterized by its intense and fruity flavour. Sensorially, it is an intense and very rich oil, it appears spicy and bitter, medium fruity with the presence of notes of green grass, aromatic herbs and green almond.

For lovers of good oil, it is considered a delicatessen due to its intense flavour, making it perfect for eating with raw food. It is also a unique and an oil known by few people, which gives it a high status within the world of the most exclusive oils.

Alfafarenca EVOO is characterized by having a high content of polyphenols and oleic acid, which can exceed 70%, therefore it has a medium stability against oxidation.

ORIGIN

This variety is native from El Comtat, a region in Alicante, and more specifically, from the town of Alfafara, from which it receives its name. It is in this town where the highest concentration of this variety resides.

OR d’Olea’s Alfafarenca Extra Virgin Olive Oil has been grown and collected directly in the town of Alfafara, in the heart of the Sierra Mariola. The great variety of endemic aromatic plants found in this protected Natural Park and their medicinal properties undoubtedly contribute nuances to its intense flavour.

DESCRIPTION

The Alfafarenca variety can be considered a late variety and its harvest runs from November to January. According to the data from the study carried out by the entity Cooperativas Agro-alimentarias of CV on the qualitative characteristics of the VOO in Comunidad Valenciana, the fat content of the olive evolves from an average value of 15.6% in the first fortnight of November, up to 22.6% in the first fortnight of January, so the theoretical fat yield increases from 13-14% to 19-20%. It should be noted that a later harvest, seeking a higher yield and/or a decrease in bitterness and spiciness of the oil, gives rise to oils of poorer quality, with a significant decrease in the polyphenol content, the oleic acid content, the stability and the intensity of the fruitiness.

The Alfafarenca variety tree is of medium-high vigor, with an open habit and thick density, with lanceolate-shaped leaves, medium to long in length and medium to narrow in width. The fruits are heavy with an ovoid and asymmetric shape and a rounded apex. The color of the fruits when ripe is black.
